Ingredients

  • 1 oz. (2 tbsp) 28 g (30 ml) unsalted butter
  • 1 tbsp 1 tbsp cocoa powder
  • 2½ tsp 2½ tsp powdered erythritol
  • ¼ tsp ¼ tsp vanilla extract
  • 1 cup 240 ml boiling water

Making low carb simple

Instructions

Instructions are for 1 serving. Please modify as needed.

  1. Put the ingredients in a tall beaker to use with an immersion blender.

  2. Mix for 15-20 seconds or until there's a fine foam on top.

  3. Pour the hot cocoa carefully into cups and enjoy.

Serving suggestions

If you want to make your hot cocoa even richer, add a dollop of whipped coconut cream before serving. Or whipped heavy cream if you tolerate dairy.

Replace the water with full-fat milk for a richer taste. But keep in mind that the carb count will go up about 11 grams per cup.

If you want something extra, add a few chocolate shavings or a sprinkle of cinnamon on top!

Substituting ingredients

Use ghee (clarified butter) or coconut oil for a dairy-free option.

Enjoy it right away

This recipe isn't good for preparing ahead of time. Once chilled, the melted butter will set and separate which will leave you with a grainy mixture.

If this accidentally happens, you can reheat it in a sauce pan over medium heat and then pulse it with an immersion blender until smooth and frothy again.

    Let's get real here. This tastes HORRIBLE as written. Add heavy cream and any sweetener that isn't Stevia. It has a metallic, bitter taste. I liked this with erythritol.

    None of the recipes here work. The aren't sweetened. You have to sweeten chocolate or it tastes disgusting. Just use low carb sweetener.

    I haven't made this yet. Just started Keto in July 2018 after doing the 2 week meal challenge from this site. I haven't stopped since although my fiance, Mark, and I just took a break for our wedding this past Saturday, 10/20. Hot chocolate has always been a go to drink as the thermometer drops. I don't really like butter so I find myself challenged with a lot of keto recipes. I use it just maybe not enough of it. I'm going to try this without the butter because (for me) no! I will also use Almond milk instead of water and the idea of whipped heavy cream sounds great to me - just need to check the carbs on the heavy cream. Don't want to get too close to 20 grams.

    As far as low carb goes this was awesome! The longer you are on Keto, the better stuff like this tastes. I added heavy whip cream (more than a tbsp) salt, erythritol, vanilla and 1.5 tbsp cacao powder into water. Blended it up and it was great!

    I went with Tbsp heavy cream instead of butter, monkfruit for sweetener, and half coffee in place of water. Not bad for a mocha Java.

    I am used to drink my coffee without sweetener and I found the hot cocoa to be quite good..... I added some heavy cream and skipped the vanilla, not having any around. I still prefer my buttered coffee with heavy cream but this a good alternative.

    I just made this but I only had liquid stevia. It wasn’t too terrible but I’d say if you’re using liquid stevia probably use about half the amount then the recipe calls for & a splash of HWC makes it more like real cocoa

    Be careful with Stevia that you don't heat it - it makes it go terribly bitter. Heat all the other ingredients together, than add it last and serve.

    Water ruins it. But I got a start experimenting monk fruit.
    This is my fix:

    Heavy cream (36% - more fat better!) - fill your mug so you can still stir vigorously
    Add while stirring chocolate powder to colour - darker better? I use a small whisk.
    Sweeten to taste with monk fruit
    Microwave and watch so you stop “just” as it starts to boil - don’t walk away.
    A final stir to finish
    Enjoy.

    Just found this recipe and read the reviews. I created the dairy version for myself about three weeks ago. I have been doing my hot cocoa with hot water, 1 level tsp of 100% cocoa and 2 dollops of cream. No sugar, - I'm trying to wean myself from having a sweet tooth - although recently I succumbed to temptation and added a tsp of xylitol (heavenly!!!). .... I have to admit 100% cocoa is an acquired taste, especially to those of us sweet tooths new to keto and my first reaction was yuck!!. Having said that, I have persisted with this drink, because sometimes you just need that 'having something decadent' feeling. I've been on keto for 3 months now. And after two and a half weeks of consistently having this hot cocoa, I am finally really enjoying it and feeling like I am having a treat, even without adding xlitol. Yay!!! To my fellow newbies, I would encourage you to persist and remember that it takes 21 days to develop a new habit, and sometimes that new habit is healthy food options.

    This was good. I used 1 tbsp ghee and 1 tbsp heavy whipping cream in place of regular butter because i didn't have unsalted butter. Also steeped a bay leaf in the boiling water before adding to the chocolate mix...Caribbean style hot chocolate. Definitely a drink I will make again. I will also try substituting coffee for the water as some others have suggested.

    Basically a bulletproof hot chocolate. Not too bad, probably would tasted better if I could have added heavy whipping cream, but I'm lactose-free, so that wasn't an option :)

    Be sure to read the Metamucil labels carefully as some contain sugar or maltodextrin.
