Easy Flaky Pie Crust

This flaky pie crust is ridiculously easy to make, with just 5 ingredients, and it turns out beautiful and delicious every time.

Everyone needs a go-to, no-fail pie crust recipe, so I wanted to share mine with you. But first a back story.

One of the very first years I started cooking for the holidays, I made a French silk pie using a random butter crust recipe. For some reason, the pie crust had turned to some strange translucent, rubber-like consistency.

Everyone chewed on their rubber pie silently (including my hubby who was still my boyfriend at the time... it was the first thing I cooked for him! 🙈), until I finally broke the ice and mentioned that there was obviously something wrong with the pie! 😂

I have never used that recipe again. And much to my hubby's delight, I have found the perfect flaky pie crust recipe that turns out perfect. Every. Time.

It's flaky. It's delicious. It's easy. And best of all, it's NOT rubbery.

How to Freeze Pie Crust

This pie crust recipe is freezer friendly.

To freeze, follow recipe steps 1-3. Split dough in half and form into two discs. Cover each disc in plastic wrap then aluminum foil. Label and store in the freezer for up to 3 months.

Why I Use Shortening and Butter in My Pie Crust

As I mentioned earlier, I had a very bad experience with my very first butter pie crust. Since then, I have actually successfully made some that are a more normal consistency.

However, in my pie crust experimentation, I've found that shortening only and shortening and butter pie crusts taste better, hold their shape better, and are easier to work with (especially for beginners!) than all-butter crusts.

The butter and shortening crust is the best of both worlds. Flaky, buttery, and easy to work with.

For very beginners who are looking for the EASIEST possible pie crust to work with, use all shortening (you can just substitute 1:1 with the butter in the recipe). I don't even need to chill all shortening crusts to work with them. So simple.

Can You Use All Butter for Pie Crust?

Yes, you can. You can see above why I prefer not to.

But if you're a shortening hater and refuse to use it at all, here are some tips for dealing with butter crusts:

  1. Butter crusts need to be chilled for at least 2 hours before handling, preferably overnight. (See the make ahead instructions in the recipe for how to store).
  2. Flour, flour, flour your work area. All my butter crusts like to stick to the surface, and I often have to use my bench scraper to pull them up cleanly.

How Long Do You Bake a Pie Crust Unfilled?

To bake a pie crust without filling, line with parchment paper after rolling out and pricking the bottom with a fork. Fill with pie weights or dry beans. Bake at 400°F for about 14-15 minutes.

Add cold water, and stir with a fork until it forms a ball. (Photos 4-6) If there's still flour at the end, add water, a teaspoon at a time. You want the dough to be stiff, not sticky, so be careful not to add too much water.

Divide in half, and form into discs. Cover in plastic wrap, and let the dough chill in the refrigerator for at least 30 minutes before rolling out.

  • 2 ¼ cups flour
  • ¼ teaspoon salt optional
  • ½ cup cold water

Instructions

  • In a large mixing bowl, cut shortening, butter, and flour together (add salt if you're using). A pastry blender is preferred, but as a newlywed without a well stocked kitchen, I have used a fork with success.

  • Divide in half, and form into discs. (If you're only using half, you can freeze the other half now.) Cover in plastic wrap. Let the dough chill in the refrigerator for at least 30 minutes before rolling out.

  • If you need a baked pie shell, bake in a 400°F oven for 14-15 minutes, or until the crust is cooked through and no longer translucent.

FAQs

What is the secret to making flaky crust? ›

The key to the flaky crust is to move fast! Rolling and folding the dough while the butter is still cold creates distinct layers of butter and flour that will steam apart during baking, making the crust light and flaky.

What is the best flour to use in flaky pie crust? ›

All-purpose flour is the best flour to use in flaky pie crust. It creates that light, flaky texture that's key for the perfect texture. I don't recommend using another type of flour. The medium amount of protein in all-purpose flour makes for a tender crust; using high-protein bread flour leads to a tough, chewy crust.

Which is the best fat to use when making a flaky pie crust? ›

The pros: Butter has the best flavor. A butter pie crust forms light, lofty, flaky layers while it bakes. The flakiness comes partially from the water content of butter, which evaporates as the pie bakes and turns to steam, separating and puffing up the layers in dough.

What is the approximate ratio of ingredients in flaky pie dough? ›

More typically, flaky pie dough requires a ratio of about 1:2:3 in terms of fats:liquids:flour. For instance, a common recipe might suggest using 1 cup of fat (such as butter or shortening), 2 cups liquid (usually cold water), and 3 cups flour.

Why add apple cider vinegar to pie crust? ›

The acid in the apple cider vinegar tenderizes the dough by slowing the gluten production in the dough. This prevents it from getting tough and elastic like bread dough. Love me tender. If you've ever bitten into a slice of pie with a tough crust, you know the value in a tender, flaky pie crust.

Does butter or shortening make a flakier crust? ›

Butter for flakiness and flavor, and shortening for its high melting point and ability to help the crust hold shape. You can use butter-flavor shortening if desired. If you want to skip the shortening, feel free to try this all-butter pie crust instead.

What happens if you use milk instead of water in pie crust? ›

Some bakers use milk or buttermilk in their pie crust. Thanks to their milk solids, both will help crust brown and add a bit of tenderness. But the classic liquid in pie crust is water — ice water, to be precise.

How do you keep the bottom of a pie crust flaky? ›

Crust dust is a 1:1 mixture of flour and granulated sugar. When baking a pie, especially a fruit pie, a couple of teaspoons of crust dust sprinkled into the bottom of the crust will help prevent the crust from becoming saturated with juicy filling as it bakes.

What are the six ways to ensure a tender flaky pie crust? ›

7 pie crust tips for tender, flaky results every time
  1. 1Keep the dough ingredients cool.
  2. 2Use a light touch.
  3. 3Hydrate the dough (but not too much)
  4. 4Chill the dough.
  5. 5Keep the dough from sticking.
  6. 6Roll the dough out evenly.
  7. 7Relax.

Is it better to make pie crust with butter or shortening? ›

Shortening has a higher melting temperature than butter. However, this also means that unlike the very hard chunks of cold butter that remain in the control dough, shortening is soft enough that it is easily overworked, resulting in a crumbly crust instead of a flaky crust.

What are two disadvantages of using all butter in pie crust? ›

What are the advantages and disadvantages of using butter in a pie crust? Advantages : excellent flavor and forms distinct flaky layers. Disadvantages: Expensive and butter melts easy bettween 82.5 and 96.8 degrees F. It takes more time to make pastry because it must be refrigerated.

Is it better to make pie crust by hand or food processor? ›

Some cooks swear by the food processor, but it has drawbacks. Adding the water via a food processor can very quickly result in an overworked dough (read: a tough crust). Making crust by hand allows you to really get a feel for what it should feel like, but it's slower and more labor-intensive.

Why does butter leak out of pie crust? ›

A little leakage is fine, but if you find that you are getting pools of butter, it is likely that you have not incorporated the butter well enough. Pie dough is cracking when you go to roll it out. This could be because it is too cool, or your dough is under hydrated.

How does a pie crust get its flaky texture? ›

Super-flaky pie crust: the technique

Classic puff dough gets its flaky layers through a series of “turns:” a slab of butter is enveloped in dough, then the whole is rolled, folded, and turned multiple times, each turn resulting in more layers.

Why is my flaky pastry not flaky? ›

The fat may have been too warm and has blended with the flour instead of remaining in layers. Make sure you rest the pastry sufficiently between rollings.

Why isn't my pie crust flaky? ›

There is one main rule to remember when it comes to baking all butter pie dough: very cold dough should be put in a very hot oven. Flaky pie pastry should be thoroughly chilled before baking and baked at a high temperature, ideally around 425ºF at least at the beginning of the bake.
